Banana Bread Coffee Cake

Ingredients

Cake

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 overripe medium-sized bananas
  • ¾ cup cane sugar
  • ¼ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • ½ cup sour cream
  • ¾ cup whole milk
  • ½ cup salted butter, melted and cooled
  • Crumble

  • ¾ cup all-purpose flour
  • ¾ cup brown sugar
  • ¼ cup cane sugar
  • ½ cup salted butter, melted and cooled
  • 1 tsp cinnamon
  • Instructions

    Make the Crumble

    1. In a medium-sized mixing bowl combine all of the crumble ingredients and mix until fully combined and a crumbly mixture forms. Set aside.

    Make the Cake

    1. Preheat the oven to 350 degrees Fahrenheit and lightly grease a 9x13” or 7x10” baking dish.
    2. In a medium mixing bowl combine the flour, baking powder, baking soda, and salt. Whisk to combine. Set aside.
    3. In a large mixing bowl whisk together the mashed bananas, cane sugar, and brown sugar. Once fully combined add the eggs and vanilla extract. Whisk again until the eggs are fully incorporated.
    4. Add the sour cream, whole milk, and butter. Whisk again until combined.
    5. Pour the dry ingredients into the wet ingredients and carefully fold with a spatula until the dry ingredients are fully incorporated into the wet ingredients. Do not overmix.
    6. Pour half of the cake batter into the prepared baking dish and spread evenly. Sprinkle half of the crumble mixture over the first layer of cake. Pour the remaining batter over the crumble mixture and spread evenly, then sprinkle the remaining crumble over the top.
    7. Bake for about 50-60 minutes or until a toothpick is inserted and comes out clean or with a few moist crumbs. Begin checking at the 50-minute mark.
    8. Let cool completely before slicing and serving.
