Ingredients

Roasted Carrots

  • 8 large carrots, washed and peeled
  • 1 ½ tbsp honey
  • 2 tsp curry powder
  • 2 tbsp olive oil
  • Pinch of salt and pepper
  • Yogurt Sauce

  • 1 cup whole milk yogurt
  • 2 green onions, thinly sliced
  • 2 tbsp freshly minced mint
  • 1 tbsp freshly minced chives
  • 2 tsp lemon zest
  • ½ lemon, juiced
  • Pinch of salt and pepper
  • Toppings

  • Chopped pistachios
  • Honey, to drizzle
  • Instructions

    Make the Carrots

    1. Preheat the oven to 425 degrees Fahrenheit.
    2. Cut the carrots into 2-3 inch pieces and place into a 9x13” baking dish. Add the honey, curry powder, olive oil, and a generous pinch of salt and pepper. Toss with your hands to fully coat the carrots and make sure everything is combined.
    3. Roast for about 25-30 minutes, stirring every 8-10 minutes or until the carrots are fork tender.

    Make the Yogurt Sauce

    1. Combine all of the yogurt sauce ingredients into a bowl and whisk until completely smooth. Taste and add more salt if desired.

    Assemble

    1. Spread the yogurt sauce onto your serving platter and top with the freshly roasted carrots.
    2. Garnish with a drizzle of honey and chopped pistachios.
    3. Serve alongside your favorite main and enjoy!
