Pancakes

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • ¼ cup cup all-purpose flour
  • 2 eggs
  • 1 ½ tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter, for cooking
  • Optional Toppings

  • Mixed berries
  • Greek yogurt
  • Maple syrup
  • Instructions

    Make the pancakes

    1. Combine all ingredients in a blender and blend until mostly smooth, scraping down the sides as needed. The batter will be thick but pourable.
    2. Heat a nonstick skillet over medium-low heat. Once hot, add a little bit of butter to coat the pan.
    3. Pour ¼ cup into the pan per pancake and cook for about 2-3 minutes or until the outer edges firm up and begin to slightly bubble, then flip and cook for another 2 minutes or until cooked through.
