Broccolli Cheese Egg Bites

Ingredients

  • 8 eggs
  • 2 cups frozen broccoli, thawed
  • 1/2 tsp salt
  • 1 cup full-fat cottage cheese
  • 1 cup cheddar cheese + more to top (optional)
  • Pinch black pepper - optional for kids
  • Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. In a blender combine the eggs, cottage cheese, salt, and a pinch of black pepper if using. Blend until completely smooth.
    3. Add the cheese and broccoli to the blender and pulse until the broccoli is broken up into tiny pieces, but not completely blended.
    4. Pour the mixture into a 12 silicone muffin pan. The broccoli may settle to the bottom of the blender, so you may need to spoon some of it out into the muffin pan.
    5. Bake for 18-25 minutes or until the egg bites have set in the center and have slightly puffed up.
    6. Let cool for about 15 minutes before removing from the pan and enjoy!
