Ingredients

  • ¾ cup full-fat greek yogurt
  • ¼ cup mayo
  • 1 lime, juiced
  • ½ tsp chili powder
  • ½ tsp salt
  • Pinch freshly cracked black pepper
  • ⅓ cup crumbled cotija, plus more to serve
  • 1 tsp honey
  • 4 cups cooked + diced chicken breast
  • 1 ½ cups frozen corn, thawed
  • ½ cup finely diced red onion
  • ½ cup chopped cilantro, plus more to serve
  • 1 jalapeno, seeded and finely diced
  • Lime wedges, optional for serving
  • Instructions

    1. In a large mixing bowl whisk together the yogurt, mayo, lime juice, chili powder, salt, pepper, cotija, and honey until completely combined.
    2. Add the remaining ingredients to the dressing and toss until fully incorporated.
    3. Cover and refrigerate for 30 minutes before serving. Store in an airtight container in the fridge.
